The fan oven adjustment
A fan (convection) oven cooks faster because moving air strips away the insulating layer of still air around the food. The standard adjustment is to lower the set temperature by 20°C, or about 25–35°F, from whatever a conventional recipe specifies. Some manufacturers apply this automatically and some do not, which is why two ovens set to the same number can behave differently.
Gas marks are not linear
Gas mark 1 is 140°C and each mark adds about 14°C up to mark 9 at 240°C, but the bottom of the range has extra fractional marks (¼ and ½) for slow cooking that break the pattern. The table below is the practical reference.
